Honey Roasted Carrot Hummus

Today, we have a delicious 'honey roasted carrot hummus' π―π₯
Give the traditional hummus a super veggie boost by blending in some sweet tasty roasted carrots. It tastes delicious and is packed with goodness. Once made it can be served straight away with some pitta bread, breadsticks, crackers or sticks of cucumber, carrot, celery or peppers. Any leftovers will last for up to 5 days in the fridge.
Makes 8 portions
· 500g carrots π₯
· 2 tbsp olive oil
· ½ tsp ground cumin
· 1 ½ tbsp honey π―
· 1 tin of chickpeas (400g), drained and reserving the liquid
· 4 tbsp tahini (sesame seed paste)
· 1 small clove of garlic, peeled
· squeeze of lemon juice π
Heat the oven to 220C/200C fan/gas 7.
Peel the carrots and cut into thick pieces.
Place in a small roasting tray and toss with the olive oil, cumin and season with a pinch of salt and twist of pepper. Roast in the oven for 20 minutes, turning a couple of times.
Drizzle the honey over the carrots and mix around to coat.
Return to the oven for 10 -15 minutes, or until the carrots are tender and becoming golden. Remove and leave to cool to room temperature.
Tip the carrots into a food processor along with the chickpeas, tahini, garlic, lemon and season with salt and pepper. Blend well until smooth. If the hummus seems a little thick, loosen with some of the reserved liquid.
Taste for seasoning adding more if needed.
Serve with your choice of breadsticks, crackers or veggies to dip. π
