Couscous Salad
DELICIOUS COUSCOUS SALAD
This Salad is great to have as a side or main dish at lunchtime, dinner or even bring along to picnics. 🥗
Preparing couscous is super simple, especially if you stick to the rule of using 1 part couscous to 1½ parts very hot stock.
For this recipe all you need is a cup measurer or even a mug for all of the ingredients, making it a very quick and simple recipe to make!
This recipe is flexible, you can add whatever form of protein and/or veggies you like into the couscous…sticking with just one or a combination of a few. It’s a great way to sneak a few ingredients that your little ones may not be too keen on! You can have some fun trying all different bright and colourful combinations! 🌈
Serves 2-4
· 1 cup couscous
· ½ cup frozen peas
· 1 ½ cups very hot stock (vegetable or chicken)
· 1 tbsp olive oil
· 1 tbsp white or red wine vinegar
· ½ cup sweetcorn
· ½ cucumber, cut into small chunks
· ½ - 1 cup of your choice of protein such as grated cheese, scrambled egg, flaked tinned tuns, chopped ham, tinned chickpeas or white beans
Put the couscous and peas in a large bowl. Pour over the hot stock, olive oil and vinegar. Give everything a quick stir around and cover with a plate or cling film. Leave for around 5 minutes for the stock to be absorbed into the couscous.
Run a fork through the couscous to separate the grains.
Add the sweetcorn, cucumber, and your choice of protein, and stir to mix. 🌽
Season with a pinch of salt and pepper and serve straight away at room temperature or chill until needed. 😋
