Tomato and Bean Salad
‘Tomato and Bean Salad!’
Both delicious and healthy! π
Tomatoes come in all shapes, colours and sizes, and are super delicious at this time of the year. Try to choose ripe ones for this salad as they will be super sweet and juicy. π
Makes 4 servings
· 6 medium ripe tomatoes, or 12-15 cherry tomatoes π
· ¼ cucumber π₯
· 3 spring onions π§
· 1 tin (400g) cannellini beans
· Few basil leaves π±
· 3 tbsp extra virgin olive oil
· 3 tbsp white or red wine vinegar
π₯ Roughly chop the tomatoes, cucumber and spring onions into small chunks and put them in a large bowl.
π₯ Tear the basil leaves into small pieces and scatter them into the bowl.
π₯ Drain the cannellini beans and rinse under the cold tap and gently shake to remove the water from the beans and tip into the bowl.
π₯ Add the olive oil, vinegar and a pinch of salt. Gently stir to mix and enjoy on its own or with some fresh bread.
