Cheesy chive mash scones

Next time you have some leftover mashed potato, don’t throw it away, how about making some of these super tasty cheesy scones? They are quick, easy to make, and delicious for lunch or a snack. You can eat them either warm or cold.

Makes 16

· 500g cold leftover mashed potato
· 100g plain flour, white or wholemeal, plus extra to dust
· 50g finely grated mature cheddar cheese
· 3-4 fresh chive stalks
· ¼ tsp salt
· 40g butter and a trickle of vegetable oil

Put the mashed potato, flour and cheese into a large mixing bowl. Using a pair of scissors, snip the chives over the top.

Using your hands, squish everything together until you have a thick dough. If the dough is too wet, add some more flour.

Sprinkle the worktop with flour. Divide the dough into 4 balls. Lightly roll out the first batch into a rough circle about 2 cm thick then cut into 4. Repeat with each ball of dough.

Help your little one heat a large frying pan over medium heat and add the butter and oil. Add the scone wedges and gently cook on each side for 2-3 minutes until golden and hot.

Any not eaten straight away can be frozen when cool and reheated in a frying pan or under the grill. 😁
